Al Hayba brings together craftsmanship, rich ingredients, Moroccan hospitality, and a contemporary way of presenting them. In Casablanca, each tray is still finished by hand. Filo pulled thin, pistachios chosen for colour, syrup poured only when the pastry is ready.

The recipes begin at Moroccan and Arab tables, measured by hand and repeated until they no longer need a recipe. Al Hayba keeps that patience and changes the light around it. Quieter presentation. The same ingredients. A kitchen in Casablanca that still refuses to rush a tray.

The baklava tastes the way I remember a family table. Quieter, more exact. We order the box for every gathering.
